01 - Combine sliced strawberries with granulated sugar in a bowl. Let stand for 10–15 minutes until juicy.
02 - Beat cream cheese, powdered sugar, and vanilla extract in a large bowl until completely smooth.
03 - Whip cold heavy cream in a separate bowl until stiff peaks form. Gently fold into cream cheese mixture until uniform.
04 - Arrange half the cookies in the bottom of a 9 x 9 inch dish. Spread half the cream mixture evenly over cookies, then top with half the macerated strawberries including their juices.
05 - Repeat layers with remaining cookies, cream mixture, and strawberries.
06 - Cover tightly with plastic wrap and refrigerate for at least 2 hours or overnight to allow flavors to meld and cookies to soften.
07 - Garnish with additional fresh strawberries if desired. Slice and serve cold.
